Diced onion – 1/4th cup Garlic cloves – 2 Oregano – 1/2 tsp Water – 3 cups Milk – 2 cups Maida – 2.5 tbsp Butter – 3 tbsp Salt – As per taste Black Pepper – As per taste PROCEDURE: 1. Boil 4 cups of water 2. Add the chopped broccoli to the boiling water and switch off the flame 3. Keep them for about 1-2 minutes and strain the water 4. Blanching the broccoli removes any insects or worms in it 5. Keep aside 6. In a small pan add butter. Once it melts add onion 7. When the onion turns pink, add garlic and sauté for a minute 8. Add maida and stir continuously for a minute 9. Now add the broccoli florets and mix well 10. Add water and let it cook until the broccoli is soft 11. Once the broccoli is done, switch off the flame and cool the mixture completely 12. Transfer to mixer jar and puree it 13. Pour back the puree in the pan and add hot milk to it. 14. Mix well and add salt, pepper and oregano. 15, Mix and bring to a boil. 16. Garnish with a broccoli floret and oregano. 17.
